Chicken and Sausage Gumbo

Ingredients
Protein
1 lb (450g) andouille sausage, sliced
1 lb chicken thighs or breasts, cut into chunks
Roux
½ cup vegetable oil
½ cup all-purpose flour
Vegetables
1 large onion, diced
1 green bell pepper, diced
2 celery stalks, chopped
4 cloves garlic, minced
Liquid & Seasoning
6 cups chicken broth
2 bay leaves
1 tsp thyme
1 tsp paprika
½ tsp black pepper
½ tsp cayenne (optional)
1 tbsp Cajun seasoning
Salt to taste
Finishing
1 cup okra (optional, classic touch)
2 tbsp green onions, chopped
Fresh parsley
Cooked white rice, for serving
