Chicken and Sausage Gumbo

👩‍🍳 Instructions
1. Brown the Sausage
Heat a large pot and sauté sliced sausage until browned.
Remove and set aside.
2. Cook the Chicken
In the same pot, add chicken and season lightly with salt & pepper.
Brown lightly (it will finish cooking in the gumbo).
Remove and set aside.
3. Make the Roux
Add oil to the pot.
Slowly whisk in flour.
Cook on medium-low heat, stirring constantly, for 20–30 minutes until the roux becomes dark brown (like chocolate).
This is the key flavor of gumbo.
