Vegetable patties made from carrot, zucchini and onion

Prepare the vegetables: Place the carrot and zucchini in a large bowl. Add the sliced onion and mix well.
Make the batter: In a separate bowl, whisk the egg with the milk. Sprinkle in the flour, salt, and pepper and mix until smooth.
Mix the vegetables and batter: Pour the liquid batter over the prepared vegetables and mix thoroughly.
Form and fry the patties: Heat oil in a pan. Use a tablespoon to scoop out portions of the mixed vegetables, place them in the pan, flatten slightly, and fry for 2-3 minutes on each side. Drain on kitchen paper.
Serve: Serve hot with a yogurt dip, tomato salsa, or a fresh salad. Enjoy!
Tip: These patties are also great for freezing and can be reheated in the oven or in a pan as needed.
