1½ cups finely diced onion
1 cup finely diced celery
2 tsp minced garlic
1 tbsp Bell’s Seasoning
4 large eggs, beaten
2 lbs ground turkey (85% lean)
1½ tsp kosher salt
½ tsp black pepper
For the Gravy:
2 cups reserved turkey stock
3½ tbsp butter
5 tbsp all-purpose flour
½ tsp Kitchen Bouquet (for color & depth)
Salt & pepper to taste
