Chop shrimp into small chunks and set aside.
In a bowl, mix cream cheese, green onion, garlic, soy sauce, and sesame oil until smooth.
Fold in chopped shrimp and mix well.
Place a teaspoon of the mixture in the center of each wonton wrapper.
Brush the edges with beaten egg and fold into a triangle or a pouch shape. Press to seal tightly.
Heat oil in a deep pan over medium-high heat.
Fry wontons in small batches until golden brown and crispy, about 2–3 minutes per side.
Remove and drain on a paper towel-lined plate.
Serve warm with your favorite dipping sauce!
