Recipe for Memaw’s Cathead biscuits.

Measure flour and salt into bowl that has flour sprinkled in it, cut lard into flour until its crumbly (about pea size) I use a fork or spoon to do this. Add buttermilk and using your floured hands, lightly mix until a soft dough forms. I usually have to add a bit more flour as I’m mixing to keep it from being too sticky. This must be why memaw kept flour in the bowl all the time. I don’t roll dough out, (you can) but instead, I pull off pieces of dough and roll it in my hands like I saw my mother and memaw do it. Always use a round pan and grease it well (I always use bacon grease) Place biscuits touching each other and bake in 400 degree oven 15 to 20 minutes. Makes about 6 to 7 biscuits. I brush melted butter on top. ENJOY!
