Ingredients:

For the Beetroot Pizza Crust:

1 cup cooked and pureed beetroot (about 2 medium beets)

1 ½ cups whole wheat flour (or gluten-free flour)

1 teaspoon baking powder

½ teaspoon salt

1 tablespoon olive oil

½ cup warm water

1 teaspoon dried oregano (optional)

For the Toppings:

1 cup canned chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika (or regular paprika)

Salt and pepper, to taste

1 ripe avocado, sliced

Fresh spinach leaves

2 tablespoons tahini (for drizzling)

Fresh lemon juice (optional, for extra flavor)
