Peaches and Cream Cheesecake Bars

Step 1: Prepare the Bars

Preheat your oven to 350°F (175°C).

Grease a 9×13-inch baking pan with cooking spray.

In a large bowl, cream together the butter and sugar until light and fluffy.

Add the eggs and vanilla extract; beat well to combine.

In a separate bowl, whisk together the flour and salt.

Gradually add the dry ingredients to the wet mixture until just combined.

Spread half of the batter evenly into the bottom of the prepared baking pan. Set aside.

Step 2: Prepare the Cheesecake Layer

In a medium bowl, beat the cream cheese and sugar together until smooth.

Add the vanilla and egg; beat until fully combined.

Spread the cheesecake mixture evenly over the batter layer.

Spoon the peach pie filling evenly over the cheesecake layer.

Step 3: Assemble and Bake

Drop spoonfuls of the remaining batter over the top of the peach layer. (It’s fine if it doesn’t fully cover the filling—the batter will spread while baking.)

Bake for 30–35 minutes, or until the top is lightly golden brown.

Remove from the oven and allow to cool completely.

Step 4: Make the Glaze

Once the bars are completely cooled, whisk together the powdered sugar, milk, and almond extract until smooth.

Drizzle the glaze over the top of the cooled bars.

Step 5: Serve

Cut into squares and serve!
