One Pot Lasagna Soup Recipe

Instructions

1. Brown the Meat
In a large pot over medium-high heat, cook the ground beef and Italian sausage, breaking it up with a spoon. Once browned, drain excess grease.

2. Sauté the Aromatics
Add the chopped onion and minced garlic to the pot. Sauté until softened and fragrant (about 3–5 minutes).

3. Combine Ingredients
Stir in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and salt and pepper. Bring everything to a boil.

4. Add the Noodles
Break lasagna noodles into smaller pieces and add them to the pot. Reduce heat to low, cover, and simmer for 15–20 minutes, or until noodles are tender and the soup has thickened.

5. Serve and Top
Ladle into bowls and top with your favorite cheese — Parmesan, mozzarella, or ricotta — for that classic lasagna finish.

Tips & Variations
✔ Add chopped spinach or zucchini for a veggie boost
✔ Swap sausage for turkey or plant-based crumbles for a lighter version
✔ Stir in a spoonful of ricotta directly into each bowl for extra creaminess

Enjoy!
