Meatloaf with Mashed Potato Layer

Directions

Preheat oven to 375°F (190°C).

In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and black pepper.

Press the meat mixture into the bottom of a greased baking dish.

Spread the ketchup evenly over the top of the meatloaf.

Bake for 25 minutes.

Meanwhile, bring a pot of water to boil and cook the sliced potatoes until tender, about 15 minutes.

Drain the potatoes and mash them with sour cream, milk, and butter. Season with salt and pepper to taste.

After the meatloaf has baked for 25 minutes, spread the mashed potatoes over the top.

Sprinkle with shredded cheddar cheese and chopped green onions.

Return the dish to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.

Let the meatloaf rest for 10 minutes before slicing and serving.
