Mac & Cheese

Cook the macaroni in salted boiling water until al dente, then drain.

In a saucepan, melt the butter, then add the flour and stir for 1 minute to form a roux.

Gradually pour in the warm milk, whisking constantly until smooth and thickened.

Remove from heat and stir in most of the cheese (keep some for topping). Season with salt, pepper, and optional spices.

Mix the cooked macaroni with the cheese sauce.

Transfer to a baking dish, sprinkle the remaining cheese on top, and bake at 180°C (350°F) for 20 minutes, until golden and bubbly.
