1. Prep the Oven and Skillet
Preheat oven to 350°F (175°C).
Grease a 9×13-inch baking dish and set aside.
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
2. Season the Beef
Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until liquid is absorbed.
Stir in Rotel and optional onion. Cook for 2–3 minutes more. Season to taste.
3. Build the Biscuit Base
Press biscuit dough evenly into the bottom of the baking dish, overlapping as needed to form a solid crust.
4. Layer the Casserole
Spoon the beef mixture over the biscuit base.
In a bowl, mix sour cream, mayonnaise, and 1 cup cheddar. Spread this creamy layer over the beef.
Sprinkle remaining cheddar cheese on top.
5. Bake to Perfection
Bake for 25–30 minutes, until cheese is bubbly and lightly browned, and biscuits are cooked through.
Let rest for 5 minutes before slicing and serving.
