Instructions:
Make the Chicken Mixture: In a large bowl, combine the shredded chicken, Dijon mustard, and egg. Mix well until everything is evenly incorporated.

Add Seasonings and Breadcrumbs: Add the dried thyme, onion powder, garlic powder, salt, and black pepper to the chicken mixture. Stir well. Then, add the breadcrumbs and mix until the mixture holds its shape but isn’t too dry. If it’s too wet, add a bit more breadcrumbs.

Shape the Fritters: Use your hands or a spoon to form the chicken mixture into small patties or fritters, about 2 inches in diameter. Place them on a plate or baking sheet.

Heat the Oil: Heat about 1/4 inch of oil in a large skillet over medium-high heat. The oil is hot enough when a small piece of the mixture sizzles when dropped in.

Fry the Fritters: Carefully add the fritters to the hot oil, making sure not to crowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy. Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.

Serve: Enjoy your crispy chicken fritters hot with your favorite dipping sauces like ranch dressing, honey mustard, or spicy aioli.
