2. Slice each King’s Hawaiian sweet roll in half horizontally and arrange them evenly in a greased 9×13-inch baking dish.
3. In a medium bowl, combine the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until the mixture is smooth and creamy.
4. Gently fold in the drained crushed pineapple and shredded coconut into the cream cheese mixture until evenly distributed.
5. Spread the cheesecake mixture evenly over the bottom halves of the sweet rolls in the baking dish.
6. Place the top halves of the rolls back on, pressing lightly to secure them.
7. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the mixture is bubbly around the edges.
