Instructions:
1️⃣ Cook the Meat:
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the ground beef (or pork) and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
2️⃣ Sauté the Vegetables:
Add diced onion and minced garlic. Sauté for 2–3 minutes until softened.
Add diced carrot and bell pepper. Cook for another 5 minutes, stirring occasionally.
3️⃣ Add Potatoes & Green Chiles:
Stir in the diced potatoes and roasted green chiles.
Add diced tomatoes (with juice if using canned).
4️⃣ Season & Simmer:
Season with cumin, oregano, smoked paprika, salt, and pepper. Stir well.
Pour in the beef broth or water and bring to a boil.
Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until the potatoes and carrots are tender and flavors meld.
5️⃣ Adjust & Serve:
Taste and adjust seasoning with more salt and pepper if needed.
Serve hot, optionally garnished with fresh cilantro. Pairs perfectly with warm tortillas or rice.
