Gluten-Free Chicken Noodle Soup

Ingredients
1 tablespoon olive oil or butter

1 medium onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

3 garlic cloves, minced

8 cups chicken broth (ensure gluten-free)

2 cups cooked chicken, shredded or diced

1 teaspoon salt (more to taste)

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

1 bay leaf

2 cups gluten-free noodles (fusilli, penne, egg-style, etc.)

Optional: 1 tablespoon lemon juice or a squeeze of fresh lemon

Optional: Fresh parsley for garnish
