Prepare the Candy Mixture:
In a medium saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly until the sugar dissolves. Attach a candy thermometer.
Boil to Temperature:
Continue cooking without stirring until the mixture reaches 250°F (hard-ball stage).
Beat Egg Whites:
While the syrup is cooking, beat egg whites and salt with an electric mixer until stiff peaks form.
Add Hot Syrup:
Gradually pour the hot syrup into the beaten egg whites while mixing on medium speed.
Continue Beating:
Increase the mixer speed to high and beat until the mixture loses its gloss and holds its shape. Fold in nuts and vanilla extract if using.
Shape Divinity:
Drop spoonfuls of the mixture onto a parchment-lined baking sheet, or spread evenly in a greased pan.
Cool:
Let cool at room temperature until firm.
