Sauté Onions
In a bit of oil, sauté the chopped onions until tender.
Cook the Pork
Add the ground pork and cook until browned.
Season the Mixture
Add garlic, ginger, salt, and pepper. Stir to blend flavors. Then add oyster sauce and mix again.
Add Cabbage
Stir in the coleslaw mix. Cook for 3–5 minutes depending on how crunchy you want the filling.
(Optional) Add Eggs
Add in mashed scrambled eggs for added texture and flavor.
Wrap the Egg Rolls
Place about 2 tablespoons of filling on each egg roll wrapper. Start rolling from the corner closest to you, fold in the sides, wet the ends with water, and seal tightly.
Heat Oil
Heat oil in a deep fryer or large pot to 350–360°F (175–180°C).
Fry the Egg Rolls
Fry 1–3 egg rolls at a time until golden brown. Drain on paper towels. Ensure each roll is sealed to prevent greasiness.
Serve with Sauce
Serve with store-bought duck sauce or make your own with apricot jam, light corn syrup, a bit of water, and a touch of ginger for added flavor.
