Dubai Chocolate with Kataifi and Pistachio Paste

Instructions:

Prepare the Kataifi:

Preheat your oven to 375°F (190°C).

Gently pull apart the kataifi dough, separating it into individual strands. Place the strands in a large bowl.

Pour the melted butter over the kataifi dough and toss it gently to coat the strands evenly.

Spread the kataifi in a single layer on a baking sheet and bake for about 15-20 minutes, or until golden and crispy. Keep an eye on it so it doesn’t burn. Once done, remove it from the oven and set it aside to cool.

Prepare the Pistachio Paste:

If you’re using pre-made pistachio paste, simply stir it well to loosen up. If you’re making your own:

Grind pistachios in a food processor until they form a paste. Add honey or a little water to help it come together into a smooth texture.

Optionally, add rose water or orange blossom water for extra fragrance.

Season with a pinch of salt to bring out the flavors.

Melt the Chocolate:

Chop the chocolate into smaller pieces to help it melt evenly.

Melt the chocolate using a double boiler or microwave (heat in 20-second intervals, stirring in between, until completely smooth).

Assemble the Dish:

Spread a thin layer of pistachio paste onto the base of each serving plate or into individual serving dishes.

Place the crispy kataifi on top of the pistachio paste, pressing it down gently to form a little nest.

Drizzle the melted chocolate generously over the kataifi, ensuring the strands are well-coated with chocolate. You can use a spoon or even a piping bag to control the flow of the chocolate.

Garnish:

Garnish with a few extra crushed pistachios on top.

For an elegant touch, you can add edible gold leaf on top for a luxurious finish (optional).

Allow the chocolate to set slightly before serving, or you can chill the dessert for a firmer texture.

Tips:

If you prefer, you can add a bit of cardamom or saffron to the pistachio paste for an even more authentic Middle Eastern flavor.

This dessert is best served fresh, but you can store it in the fridge for a day or two.
