Coconut Pound Cake

Ingredients

For the Cake:

1 cup (2 sticks) unsalted butter, softened

½ cup vegetable shortening (or replace with butter)

3 cups granulated sugar

6 large eggs, room temperature

3 cups all-purpose flour

½ tsp baking powder

½ tsp salt

1 cup coconut milk (or whole milk)

2 tsp vanilla extract

1 tsp coconut extract (optional, for stronger coconut flavor)

1 cup sweetened shredded coconut

For the Coconut Glaze:

2 cups powdered sugar

3–4 Tbsp coconut milk (or whole milk)

½ tsp coconut extract (optional)

½ cup sweetened shredded coconut (for garnish)
