Coconut Chewies

Ingredient Amount / Notes
Butter ½ cup
Brown sugar 2 cups
Eggs 2
Vanilla extract 2 tsp
All-purpose flour 1½ cups
Baking powder 1 tsp
Salt 1 tsp
Shredded sweetened coconut 1½ cups
👨‍🍳 Preparation
1. Preheat and Prep
Preheat oven to 350°F (175°C).
Grease an 8×8-inch baking dish and set aside.
2. Brown the Butter
In a large saucepan over medium-high heat, melt the butter.
Swirl the pan continuously until the butter turns a rich amber color.
Remove from heat immediately to prevent burning.
3. Mix the Wet Ingredients
Stir brown sugar into the warm butter until fully combined.
Add eggs and vanilla; mix until smooth.
4. Add Dry Ingredients
Stir in flour, baking powder, and salt until just combined.
Fold in the shredded coconut.
5. Bake to Perfection
Pour batter into the prepared dish and smooth the top.
Bake for 40–45 minutes, covering with foil for the last 10 minutes to prevent over-browning.
Let cool completely before slicing into bars.
