Chicken and Vegetable stir fry

In a small bowl, whisk together the soy sauce, oyster sauce, and grated ginger. If you want a thicker sauce, you can mix a teaspoon of cornstarch with a little water and add it to the mixture. Stir well and set aside.
Heat a large skillet or wok over medium-high heat and add a tablespoon of vegetable oil.
Add the chicken pieces to the hot pan and cook until golden brown on all sides and cooked through. This usually takes about 5-7 minutes. Remove the chicken from the pan and set aside. 4. In the same pan, add the remaining tablespoon of oil. Add the chopped onion and garlic, and sauté until fragrant and the onion is translucent.
Add the peppers, carrot, broccoli and zucchini to the pan. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.
Put the chicken back in the pan along with the vegetables.
Pour the prepared sauce mixture over the chicken and vegetables. Stir everything to make sure it is well coated with the sauce. Cook for a few additional minutes so everything is heated through and the flavors blend.
Taste and adjust the seasoning with salt and pepper, and add chili or hot sauce if desired.
