1. In a large bowl, combine the shredded chicken, mozzarella cheese, cream cheese, sour cream, minced garlic, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
2. Lay out the flour tortillas on a clean surface. Spread an equal amount of the chicken mixture onto the center of each tortilla.
3. Top the chicken mixture with fresh spinach leaves and diced tomatoes. If desired, sprinkle with chopped parsley.
4. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, enclosing the filling.
5. Heat olive oil in a large skillet over medium heat. Place the wraps seam-side down in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
6. Remove from the skillet and let cool for a minute before slicing in half. Serve warm.
