Carmen’s Butterscotch Cobbler

Instructions

1️⃣ Preheat Oven
Preheat your oven to 350°F (175°C). Grease a round 9-inch baking dish.

2️⃣ Prepare Topping
In a small bowl, sift together the dark brown sugar and cornstarch. Set aside.

3️⃣ Mix Cake Batter
In a large bowl, combine flour, dark brown sugar, and baking powder.
Stir in melted butter, egg, milk, and corn syrup until just combined. Do not overmix.

4️⃣ Assemble Cake
Pour the batter into the prepared baking dish.
Evenly sprinkle the brown sugar and cornstarch topping mixture over the batter.

5️⃣ Add Water
Carefully pour boiling water over the back of a large spoon, letting it gently drizzle across the surface of the cake.
(This helps prevent disturbing the topping while evenly distributing the water.)

6️⃣ Bake
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
The top will be set, while the bottom forms a rich sauce.

7️⃣ Serve
Scoop portions into bowls and drizzle with the warm sauce from the bottom of the dish.
Best enjoyed warm, especially with vanilla ice cream.
