Sear the Beef
Heat oil in a large pot or Dutch oven. Sear the roast on all sides until browned.
Cook Aromatics
Add onion and garlic; cook for 2–3 minutes.
Add Broth and Vegetables
Pour in the beef broth and add carrots, potatoes, salt, pepper, and thyme.
Simmer
Cover and simmer on low for 3–4 hours, or until beef is tender.
Serve
Shred beef and serve with vegetables and broth.
