Bacon Guacamole Deviled Eggs

Instructions

Step 1: Prepare the Hard-Boiled Eggs
Slice your cooled, hard-boiled eggs in half lengthwise. Gently remove the yolks and place them in a medium mixing bowl. Arrange the empty egg white halves on a serving platter.

Step 2: Create the Guacamole Filling
To the bowl with the egg yolks, add the scooped avocado and fresh lime juice. Mash together with a fork until smooth and well-combined. The lime juice not only adds flavor but also helps prevent the avocado from browning.

Step 3: Add the Mix-Ins
To the avocado-yolk mixture, add the crumbled bacon, diced red onion, jalapeño, tomato, and chopped cilantro. Season with salt, black pepper, and a pinch of cayenne. Stir gently until everything is evenly incorporated.

Step 4: Fill the Egg Whites
Spoon the guacamole mixture evenly into the waiting egg white halves. For a neater presentation, you can spoon the filling into a zip-top bag, snip off a corner, and pipe it into the eggs.

Step 5: Garnish and Serve
Garnish the filled deviled eggs with an extra sprinkle of crumbled bacon, a light dusting of chili powder, and a few small cilantro leaves.

Serve immediately for the best flavor and texture!

Chef’s Notes & Tips
Perfect Hard-Boiled Eggs: For easy-peel eggs, steam them! Place eggs in a steamer basket over boiling water, cover, and steam for 12-13 minutes. Then, transfer them to an ice bath to cool completely.

Avoid Browning: This dish is best enjoyed right after it’s made. If you need to prepare ahead, you can boil the eggs and make the bacon the day before. Assemble just before serving.

Adjust the Heat: Control the spice level by adjusting the amount of jalapeño and cayenne pepper. For a smoky flavor, use smoked paprika as the garnish.

Creamier Texture: For an even creamier filling, you can add a tablespoon of mayonnaise or Greek yogurt to the avocado mixture.
