2. In a large mixing bowl, combine the rolled oats, almond milk, honey, vanilla extract, ground cinnamon, baking powder, and salt. Mix well until all the ingredients are evenly incorporated.
3. Fold in the diced apples, chopped pecans, and raisins or cranberries if using.
4. Pour the mixture into the prepared baking dish, smoothing it out with a spatula to create an even layer.
5. Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and the oatmeal is set.
6. Remove from the oven and let it cool for about 10 minutes before slicing into squares.
